I love St. Patrick’s Day. And even if you’re not Irish, I hope you take a chance to join in the fun.
Put on some green, fire up the Irish music, and maybe the “luck o’ the Irish” will be with you for a good long while.
I’ll be doing up a pot of corned beef and cabbage in the slow cooker. Cabbage is filled with nutrition, and if you choose a lean cut of corned beef, it’s an indulgence that won’t set you back.
Plus, with some baby potatoes thrown in, you’ll get fiber, vitamin C, B6, potassium and more.
And anything you bring to the table that follows the “green theme” is sure to be healthy too. Zucchini, green beans, broccoli, spinach, even green apples or grapes can round out your plate and make even St. Patrick’s a healthy day.
Just go easy on the green beer.
Or how about this: serve up some high protein, filling and satisfying deviled eggs. But to keep the green vibes coming, mix in a little avocado into your egg yolks.
The table will feel like Spring has sprung (and it won’t be long now), plus you’ll add some healthy fats to an already delicious appetizer.
No matter how you celebrate, just be sure you don’t forget the green. You don’t want to get pinched!
