Healthy Pancake Recipe?

Growing up on the farm in Ohio, weekend breakfasts were among my favorite meals of the week.

Fresh eggs from our chickens… bacon and sausage… and pancakes.

Just thinking about mom’s fluffy pancakes drizzled with maple syrup makes my mouth water.

Despite the gluten-free, less carb push that’s going on these days, pancakes remain one of the most popular breakfast items.

But even I don’t need – or want – all the carbs and added sugar that are lurking in popular grocery stores mixes and frozen options.

Store-bought mixes can have upwards of 45 grams of carbs, and more than 10 grams of added sugar.

And frozen pancakes often have even more added sugar.

To satisfy my pancake cravings, I make my own pancakes from scratch.

Sweetened with stevia instead of sugar, with a nutrition boost from berries and protein powder, these pancakes are much healthier than what you’ll find on the grocery store shelves.

And they taste great… even Karen agrees.

Here’s the recipe:

½ cup uncooked oats
2 eggs
1 scoop vanilla-flavored protein powder
1 oz blueberries
½ tsp baking powder
1 tbsp stevia
¼ cup water
Cooking spray
Pure maple syrup
Fresh berries, like strawberries, blueberries or blackberries

In a medium-sized bowl, combine the first 7 ingredients.

Once mixed to a smooth consistency, place a pan on the stove over medium heat and spray with cooking spray.

When the pan is hot, pour in the pancake batter.

The pancakes will need to be cooked about 1 minute on each side to be fully cooked.

Serve warm with real maple syrup and some fresh berries.

Any pancakes left over can go in the freezer for eating on another day.

Now, I know my pancakes can’t compete with mom’s.

But these are close… plus they’re a whole lot healthier.

One word of warning. If you use the above recipe with Patriot Power Protein, I can assure you it does taste great.
